Arthrex's Executive Chef William Blum Achieves CEC Certification by the American Culinary Federation

ChefWillArthrex is pleased to announce that Chef William Blum recently achieved his CEC (Certified Executive Chef) certification by the American Culinary Federation. CEC certification is awarded to individuals meeting specific educational and testing requirements, and who demonstrate a reached benchmark of skills and culinary experience with high standards for food preparation.  The certification also shows an individual's working knowledge of culinary nutrition, food safety and sanitation, and supervisory management. 

As part of the practical examination, Chef William had a three-hour time frame to prepare a three-course meal while fulfilling specific requirements, including: fabrication, butchering, portioning, at least four classic knife cuts, at least two classic sauces, at least four different cooking methods, emulsified vinaigrette, with the presentation of four plates per course, all being evaluated by at least three Certified Culinary Evaluators throughout the entire process.

  • At the end of 2012, there were 3,022 Chefs with the CEC designation
  • 189 Chefs were designated in 2012
  • 74.6% of applicants pass the written examination
  • 70.9% of applicants pass the practical examination
